Lavender Heart Cookie Recipe

Our Lavender Heart Cookies are a popular treat in the tearoom, they go down wonderfully with a hot cup of herbal tea. So much so that we often hear requests to sell them in boxes of 6, 10, or even 12, so that people can enjoy them for days after their visit to Wānaka Lavender Farm.


Though they are only on offer as individual biscuits at this time, we've come up with the brilliant idea of sharing the recipe with you, our guests and Farm Story readers! This way, you may enjoy the calming process of baking these beauties and indulging in them whenever you want.


The best part about this Lavender Heart Cookie recipe is that it's simple, easy and quick. It needs four ingredients, takes 10 minutes to make and uses your basic baking utensils/equipment!


Ingredients:


  • 350g Butter (room temperature)

  • 1 cup Sugar

  • 3 cup Flour

  • 1 tbsp Culinary Lavender (Angustifolia)*


These measurements make roughly 30 cookies. You might get more or less depending on the shape/size of your cookie cutter and the thickness when rolling out. Feel free to halve the amounts to make less cookies.


Utensils and Equipment:


  • Large spoon

  • Stand mixer**

  • Rolling pin

  • Baking tray and paper

  • Cookie cutter

  • Spatula


Method:


  1. Preheat fan oven to 175°C

  2. Add the sugar and butter into the mixing bowl, mix until creamy

  3. Add the first cup of flour and mix, then add the second cup and mix again. For the third cup, add in half and leave it there if the dough looks about right (add the last half if the dough is still a little sticky)

  4. Add in the culinary lavender, continue mixing for a few more rotations



  5. Place the dough on a floured surface (use the large spoon to scrape the stubborn bits out if needed) & roll out dough to a 3-4mm thickness

  6. Using a cookie cutter, cut out the cookies & place on a baking tray line with baking paper using the spatula to keep the shape

  7. Bake for 5-6 minutes (if they still look pale, leave in for another minute)



  8. Transfer to cooling rack, wait 5-10 minutes

  9. Dig in & thank us later!


Remember to store your bakes in an airtight container in a cool, dry place. Or, pop into a freezer for up to 3 months.

**If you don't own a fancy mixer, you can still make this the old fashioned way... It might tire out your arms but you'll be even more delighted when the cookies come out of that oven!
